White balsamic are a wonderful light colored vinegar made from Albana, Trebbiano and Montuni grape musts (grown exclusively in Modena, Italy). This blend creates a rich and full bodied product that could not be achieved with Trebbiano grapes alone. After being hand-picked, the grapes are left to dry in the sun for 10 to 15 days. During this period the natural sugar, flavor, and body of the grape is enhanced. This proprietary drying period results in an approximate volume loss of 10% through evaporation. It's aged in new white oak barrels to mature upwards of 12 years.
This product is desirable and was created for its characteristic white color to aid chefs in creating beautiful dishes without discoloring their work.

These are all natural, unflavored, extra virgin olive oils. This means they are the highest grade of olive oils- unadulterated by chemicals, heat, or other inferior ingredients.Extra virgin olive oil decreases in flavor and health benefits over time. Fresh crushed olive oil is like fresh squeezed fruit juice in that it contains the most flavor and nutrients. Over time the flavor and nutrients fade. Fused Extra Virgin Olive Oils:
Naturally flavored extra virgin olive oil goes through the Fusion process. This is a labor intensive process with a low product yield. The flavors are created through crushing the actual product, like a blood orange, with the olives and fruit are then crushed simultaneously. This process allows for the essential oils from the citrus peel to mingle with the oil from the olives. By the way, ripe olives contain up to 20% oil but the majority of an olive is comprised of water. The waste water from the citrus and olives are centrifuged away and the result is a bright, fresh, fused citrus olive oil.

Our dark balsamic condimento is of the highest quality. It's made in Modena, Italy from caramelized grape must of Trebbiano and Lambrusco grapes. The grape must in our condimento is cooked over an open wood fire in copper kettles. It is then aged using the Solera method which dictates that it be placed in a succession of different types of very old, fired wood barrels, each of which previously contained residual amounts of older balsamic dating back as far as 18 years.
